Our single-origin heather honey is harvested from wild ling heather (Calluna vulgaris) on the high moorlands of Derbyshire. It has a rich dark amber colour, a strong distinctive flavour, and the classic thick, jelly-like texture that genuine ling heather honey is known for.
This raw Peak District heather honey is cold-extracted and unpasteurised to preserve its natural enzymes, pollen and character. Ling heather honey is naturally high in antioxidants and has good antibacterial activity. Because of its dark colour, robust flavour and natural strength, it is sometimes compared to Manuka honey. The two honeys work differently — Manuka is known for its high methylglyoxal content, while ling heather honey’s activity comes mainly from other natural compounds — but both are valued as strong, characterful honeys.
